We raise cattle, pigs, lambs, turkeys and chickens on the restored savanna at New Forest Farm. We graze our animals in rotations meant to mimic the migrations of the herbivores in Africa’s Serengeti or the megafauna of Pleistocene North America. Our animals stay healthy and happy, eating an incredible diversity of nutritious and medicinal forage and are all treated with dignity and respect.
We are now taking meat orders for fall 2013. All prices include USDA processing and home delivery to the following areas: Madison, Milwaukee, and Viroqua, Wisconsin, and Minneapolis/St. Paul Minnesota. This year we have a beautiful herd of half-wild Scottish Highland, Belted Galloways, and crosses between these two unique, rare, heritage breeds. They are curious, and eat an incredibly diverse diet including cool and warm season grasses, wildflowers, prickly ash, walnut, maple, basswood, poplar, locust, grape, mulberry, hazelnut, and chestnut.
We sell our beef by the whole, half, quarter, and eighth of a cow.
Every beef side comes with a proportional mix of premium cuts including porterhouse, t-bone, rib-eye, and sirloin, as well as cube steaks, short ribs, roasts, stew meat, and ground.

We also sell whole cows, halves, and quarters by the hanging weight, which is the weight of the carcass after it’s been skinned and dressed, but before it’s been deboned and. If you cant handle a whole or a side, we can also sell by the eighth. An 1/8 of a beef is about 50 pounds of a proportional mix from one whole animal, and fits easily inside most standard freezers (above your refrigerator). For $400, we’ll cover all the processing, cutting, and wrapping costs, and will deliver the eighth to your door anywhere in the Driftless, Minneapolis, or Madison areas.
This year we have an awesome crew of Tamworth and Tamworth – Berkshire cross heritage breed pigs. They are excellent on pasture and enjoy a wide range of fruits and nuts including hazelnuts, mulberries, apples, and chestnuts. They follow behind the cattle and lambs, and to wherever fruits are ripe and falling! They especially enjoy their afternoon nap after gulping down their daily dose of fresh milk from our Jersey cow. We are raising crew of Dorper – Katahdin cross lambs which follow behind the cattle, eating the shorter grass left behind as well as shrubs and weeds. They are cute, curious, and especially enjoy listening to songs. Savanna lamb chops anyone?
Whole lambs are available for $340 and should provide ~40 lbs. of meat.
We have a flock of heritage breed turkeys that follow with the lambs behind the cattle, eating seeds and snagging insects out of the air and off the ground. These little guys are born hunters. The last of the dinosaurs.

Our free-range chickens are raised in a mobile wigwam made from hazelnut branches. They follow behind the cows and help control flies and recycle nutrients. They have unlimited access to pasture where they scratch cow pies for bugs, peck at the grass, and snatch mulberries off the ground.
Chickens are available for $15 – whole, skinless, frozen, and weigh ~3 lbs.
